CARROT CAKE OATMEAL

Ingredients

1/2 cup rolled oats

1/2 cup milk

1/2 cup plain Greek yogurt

1.5 Tbsp shredded coconut

1 Tbsp chopped pecans or walnuts

1 Tbsp raisins

1 tsp cinnamon

Pinch of nutmeg

1/2 large carrot, shredded

1/2 tsp vanilla

1-2 tsp maple syrup

Dash of salt


Directions

1. Combine all ingredients in a container that can be sealed and stir well.


2. Refrigerate overnight or for at least 4 hours. Add a bit more milk before serving if oats seem a bit dry.


3. Enjoy hot or cold!
