EASY BURRITO BOWL

Ingredients

1 batch of slow cooker shredded chicken

4 cups cooked brown rice

2 bell peppers, thinly sliced into strips

1 medium onion, thinly sliced into strips

1 Tbsp oil

3 cups shredded lettuce

Additional toppings of choice: salsa, avocado, cheese


Directions

1. Prepare shredded chicken according to last post.


2. Follow package instructions to cook the rice and portion out into 4 meal prep containers.


3. Thinly slice bell peppers and onion and saute with 1 Tbsp oil in a skillet over medium-high heat. Add additional seasonings of choice. I used chili powder, cumin, paprika, garlic powder and onion powder.


4. Combine shredded chicken, brown rice, peppers and onion in meal prep containers. Store your toppings (shredded lettuce, salsa, avocado, cheese) in a separate container to add on top after reheating.


5. Store in the fridge up to 4 days.


6. To reheat meals, place in microwave for 2 minutes. Add desired toppings and enjoy!
