GREEN BEAN QUINOA SALAD

Ingredients

3 cups of cooked quinoa (about 1 cup dry)

2–3 cups frozen cut green beans (I only had French cut green beans...but those work too!)

1 can chickpeas, rinsed and drained

1/2 cup feta crumbled

2 Tbsp lemon juice

2 Tbsp olive oil

1 tsp dried drill

Salt and pepper to taste


Directions

1. Cook quinoa according to package directions and allow to cool.


2. Thaw green beans. I put mine in a colander and ran warm water over them for a few minutes until they no longer felt cold.


3. Assemble all ingredients together in a large bowl, and toss to combine. Season with salt and pepper as desired.
