
HONEY GARLIC SLOW COOKER CHICKEN THIGHS
Ingredients
2 lbs chicken thighs (boneless and skinless)
Sauce:
1/3 cup low sodium soy sauce
1/3 cup honey
1/3 cup ketchup
4 cloves garlic, minced
1 tsp grated fresh ginger
1/2 tsp apple cider vinegar
2 Tbsp cornstarch
Toppings:
Scallions
Sesame seeds
Directions
Add the chicken thighs to your crocket in an even layer.
Add all the sauce ingredients (except the cornstarch) to a bowl and whisk until combined.
Pour the sauce over the chicken and cook on high for 3.5 hours or on low until 6 hours. Chicken is done when cooked through and easy to shred.
Once it’s ready, use tongs to remove chicken and place on a cutting board. Using two forks, shred the chicken breasts.
Meanwhile, mix the cornstarch and 2 Tbsp cold water in a small bowl and then pour it into the slow cooker. Stir with remaining sauce in the slow cooker until combined.
Add the shredded chicken back into the crockpot and stir to combine with all the liquid. Cook on high for another 15 minutes so the sauce thickens.
Serve over rice with scallions and sesame seeds sprinkled on top.
Don’t forget the veggies!! Roasted broccoli would go great with this meal!!
