LENTIL BEETROOT TACOS

Ingredients

2 cups cooked lentils

2 beets, peeled and shredded

1 onion, diced

1 clove garlic, minced

1 Tbsp harissa pasta

1 tsp smoked paprika

1/2 cup vegetable broth

Salt and pepper to taste


4 whole wheat flour tortillas (mine were homemade adapting the bagel recipe I posted a few weeks ago)

Toppings of choice


Directions

1. Heat oil in a skillet and fry onion until soft.


2. Add garlic, harissa, paprika and cook for 2-3 minutes. Don’t let the mixture dry out, add an extra splash of oil if necessary.


3. Add lentils and beetroot to the pan and stir to combine with onion and spices.


4. Pour in the vegetable broth and stir into the lentil mixture. Cook until the vegetable broth reduces and the mixture thickens, about 5-7 minutes.


5. To make the tacos, warm the tortillas and top with warm lentils and your favorite toppings.
